There are a lot of products and a lot of methods - as another reply says it depends on the weather, plus the size of the joints, the sensitivity of the stone / blocks to staining plus most importantly what the area will be used for and how it will be cleaned. - many things that are not always considered in the rush to finish, or to get the cheapest product - Buyer beware!
For domestic paths and patios a slurry applied, polyeric sand such as vdw 840plus can be ideal, but most professional are better with the epoxy bound aluival sand (rounded) types selected according to the anticipated traffic - ideal grades for driveways, commercial areas, streetworks and even heavy vehicle standings or docksides! The fact that these are not weather dependent means that professionals prefer them to be able to work to schedule whatever th weather - even in the pouring rain!

I used Romex rompox - bought from Ruscrete near southampton about 4 years ago on my own patio - Natural Limestone. The product comes in tubs like paint tins and different colours, you basically pour it out onto paving and brush it in. It worked really well. Make sure you follow the instructions and keep the compound relatively high in the gaps . It is resin based and porous. Paving was laid on a sharp sand and cement 6:1 dry mix if i remember correctly. Jointing is still sound and no cracks etc.
