Whilst i think it would be an interesting and worthwhile business i think you may struggle to find enough work to make it viable.
I would probably start two businesses - one as a normal gardener and the other as you have outlined above. That way as the amount of wildlife work you get grows you can reduce the amount of normal gardening work you do. In an ideal world eventually you would be doing only wildlife related stuff - i dont know how long that would take and how far you would have to travel.

I was concerned that doing wildlife gardening means that there will be less repeat customers as a garden would not need to be visited as regularly. Doing it along side normal gardening as well seems like the best idea.
