Spoken or email? I'll usually just email and say "I am unable to offer gardening services in your garden from X date. I trust you will find someone who can continue the work for you."
Have you ever discussed your concerns with them or proposed a realistic price increase ?
If not, Harry's approach could deliver a nice surprise by them accepting they need to review the budget hence what they pay you. We've had this happen and their response was "...well you never said anything so we thought it was ok..."
Otherwise, if you've got no where with them or other issues exist, then a short, polite note along the lines of Dan's is the best way to terminate and move on
I took over a round few months back and the rate was to low on this one it takes all day every week, the rate was lower than where it is now but we met half way, I was silly I should of stood firm and shouldn't of negotiated, now after seeing what's involved ie machinery used, it's just not profitable at the rate we agreed.
In that case it might be good to state that having spent a few weeks in the garden you realise the garden requires more time than you are able to offer, etc.
