Viburnum davidii, Prunus laurocerasus 'Marbled White' (pruned to keep it low), Cornus alba 'Aurea' (although not evergreen has summer, autumn and winter interest), Viburnum 'Le Bois Marquis' looks hardy enough and can be pruned...
Cornus sericea 'Flaviramea' a good choice, once established can be pruned in spring, has attractive coloured winter stems. Hypericum 'Hidcote' is evergreen with yellow flowers in summer. Both hardy, suit most aspects and soil and fairly low maintenance, although will need to be kept in check as left without pruning will get too big.

Look at evergreen foliage planting, Viburnum tinus Eve Price, Euonymus emrald and gold . emerald gaiety, ilex gold king, silver queen, Heuchera plum pudding, lime marmalade, bergenia cordifolia, vinca minor, lonicera pileata, pachysandra terminalis and terminalis variegata. theres quite alot out there, if you want further help and ideas, msg me.

some of the evergreys like lanvandula, helichrysum italicum, stachys ..play around with some sages too. purple sages can cover the ground pretty quick. some vincas? teucrim? lots and lots : )
