What type of Indian stone is it? The reason I ask is because different types have different reactions to chemicals.
Also are you able to post a photo showing the extent of the staining?

Its not too bad but some places have a light haze.The customer wants me to use the tuff pave jointing compound. Easier for me,but does it last longer than normal cement mortar
The 1 part polymers can have a tendency to shrink slightly and because they are porous there is the possibility that they can also darken in colour. On the + side they are easy to install and can be used in any weather (very very handy in our climate). On balance I would say that mortar will last longer if done correctly.
To get rid of the mortar haze I would opt for lithofin builders clean. It is acid based but if you water it right down it would not cause any damage to that stone which looks like either Raj Green or Autumn Brown
