If they are the 100mm cubed blocks you would struggle with a dry stone wall. If they are the 200mm by 100mm by 100mm setts you would still have difficulty as you need the weight of the wall to be pulling in and at a slight downward angle and even these would in my opinion not have sufficient volume to do this. You should be able to build a normal wall out of them i.e. with pug. Sensible advice from other contributors about 100mm block etc… I would point out however that every wall I have ever seen constructed out of granite sets looks like someone has had exactly the same idea as you I.e. ‘lets get rid of some surplus materials, rather than lets build a wall of beauty’. As Paul states probably best to use them as a rubble strip to an entrance to a driveway, a path or a header course around a shingle driveway or a patio, or sell them but not to a supplier as up will get git all.
