Yes I think a standard belfast sink would be way to small and shallow for Phormium and Box. Think your alpine route is more of a goer (small plants, shallow roots)- but ensure you have good drainage (don't just allow on the plughole which could get congested), and add plenty of grit to the soil/compost etc. Alpine plants also wouldn't mind if didn't get watered quite so often.
This is however quite a low key effect - if the pub wants more of a show stopper e.g gig, bold forms, colour, annuals/bedding etc, then other containers may be more suitable. They would also have to think about ongoing watering and maintenance but maybe you can talk to them and line up some on-going work for future.

Was thinking of going for good effect with bright coloured flowers. The belfast sinks are already there so will be using them. Am going to suggest some different size/shape containers too.
