Different soils. Differing climates.
here on the North Norfolk coast we have, if we're lucky 30cm of soil, then sharp sand. I've very rarely had to dig much beyond the soil layer to remove a plant, shrub. Looking at some of these though, maybe you don't even notice a lot of the root system as it can be so fine?
That is beautiful I love some of the older botanical pictures of plants especially the ones drawn on the plant hunter tours of yesterday year. That would make a great canvas (if allowed).
