Take them on a trial basis, 2-4 weeks or enough time to figure out if they're any good or not. My fiance drafted me a contract as that's what she does for a living - I'll look it out and send you a copy if you like.
Don't assume they know anything - make sure you watch them closely to prevent damage to machines or their general attitude. They will be representing you remember.
I find it best to keep my guy on for commercial work days as I'd rather it was only me in private gardens.
