I came across these too Chris. In my case I understand that they are House Longhorn Beetle larvae.
I think your right Phil, that looks like them. Its amazing how they can chew their way through solid wood.
Is this the long horn beetle that the ea and ports authority are trying to kill as soon as they spot them?

Not likely from this info...Asian longhorn Beetle does not infect conifers, and known range does not include NI, (where Chris is).
If you want your head to start spinning, look for a list of Beetles on Wikipedia, when you are just home from a few drinks. Would make you glad to be a horticulturist rather than an entomoligist
