A long shot and may not be the cause . I had a stihl strimmer like this and it turned out to be a tear in the rubber spark plug boot , hard to detect but one day it wouldn't switch off and running fast i got an electric shock in my hand which alerted me to the problem exposing metal under the rubber boot , I changed the rubber boot and it ran fine afterwrds .
before i changed the boot it wouldn't start somedays and then just run fast . worth a try or it could be your new carb needs re tuning .
Throttle cable to tight perhaps? or like John said: tune the carb.
Sounds obvious but with the airfilter off, make sure the "butterfly" in the carb is completely shutting down when you close the throttle. Is there an air leak between the carb and the engine? I'd suspect the cable is sticking or you haven't installed it correctly. .
