I've used 3y old grass seed and I had no issues, and had been stored in open sacks in a barn.

Grass seed that has been stored in a cool dry place (I use bins) should be good to go for up to 2 years.
As David says will probably work 3 years later, but i wouldn't want to be using it, if i happened to have seed for more than two years I would give it away rather than chance it.
Seeding an area with old(er) seed and only getting half a hit from it would cost me more in lost time / productivity than the cost of the bag.
From what I have learnt grass seed looses around 10% of its germination capability's each year it gets older
