Pruning Phormiums

Hi i have been getting moans at from a customer to prune 4 large phormiums which are way too big for the area they are in.I am slightly confused on how to prune phormiums and similar shrubs???I was always told that the way to prune such plants is too simply pull all dead growth from them. And that if you cut the leaves in the middle they will not grow back into a point again? (Which is obviuosly bad!)Please someone give some advise?

    Couple of my sites are full of these. I gather the way to treat them is to cut to ground level. I have done this and there is fresh growth showing.

    I can also confirm that from previous contractors work the leaves cut halfway down do not grow back and simply look awful.
