If you have some CAD experience then I would suggest Sketchup, but I've seen some very 'Minecrafty' looking images from people giving it a go, and I think they actually put customers off. I'd suggest either sticking with it and learning it to a decent degree before using it for your business, or you could sub it out to a freelance landscape cad person like me 😁

It's harder than it looks! You have to put in a LOT of hours learning and practicing before you can make it look any good. I gave up! If I'm not working with a trained designer, they get a drawing (which I call a sketch) and photos. A good collection of photos of the plants and materials (you're suggesting (call it a moodboard if you want) is an easy way to make it more inspiring.
