I would mow it when the grass is tall enough and any annual weeds won't tolerate it.
Perennial weeds should be ok to treat with selective after a minimum of 6 months but preferably 12 (best to check the label)
Selective herbicide Interfix / Greenor can be applied 2 months after sowing. Also, holster / crossbar too I think.
So let the grass grow, and weeds. Mow after approx 1 month high, then regualrly, and apply the weed control after 2 months.
Agree with what has said previously, over the years, we have seeded many, many thou sq m and there is always a panic when weed seedlings germinate faster than the grass. These are 90% annual weeds and will disappear after a few cuts.
