Transporter is plated to 2500kgs for towing, so you could just downplate the trailer to 2500kgs to match if you want to be double sure and squeaky clean legally.
Personally I'd just not load the trailer to it's max. Find the trailer tare and go from there. I'm pretty sure you're fine to tow a 3.5 plated trailer so long as you don't load it past your towing capacity.
No need to downplate the trailer for it to be legal just dont fill it to 2.7t
You need to make sure the trailer plate matches the vehicle, regardless of how much it's actually loaded with. My T300 is able to tow 2t, so my trailer's plated down to that.

Get it with the factory tow bar and you get trailer stability assist too.
Vito can be ordered to 2.5t.
Don't forget your loaded trailer cannot weigh more than what is pulling it (tail wagging dog etc)
You don't need to downplate it. You just have whatever the load is. Say thee trailer is 1 tonne and your load is 1 tonne then you can tow it with a van that can tow two tonnes even if the trailer is rated to 3.5t
