Try listing everything you've done in gardening/landscaping, with descriptions and try using Google to help you lay it out, did you ever work closely with plant suppliers or designers if so would they be to write a reference for you?
Maybe follow you're c.v up with a phone call, to explain yourself?

whenever I had to send out a CV i always highly weighted towards the type of work i was applying for if that makes sense.. Really amplify all of the landscaping and horticulture skills you have gained and back it up with relatable skills from previous work that isn't within the same field.
Also include a personal statement which again amplifies why you want the job you are applying for and why you are suited to the position. Include hobbies etc Even hobbies such as mountain biking etc - It's not directly relatable but shows you are active, enjoy being outside and physically fit.
1. Keep to 2 sides of A4 . Be precise, factual, truthful.
2. Start with personal details, eg name, address, email, phone, driving licence, age dob (if you wish), married, kids (if you wish) etc. Academic quals / courses. The personal stuff about age / married / kids is upto you. It can be an easy ice-breaker in the interview.
3. Personal Statement - why you are looking for this type of role / career. Only a short paragraph, not a book.
3. Career history, most recent first. More detail about the last 3.5yrs. Highlight relevant skills, but don't BS as you'll be caught out. Then the rest 15yrs, although not in same industry, highlight transferable skills eg teamwork, communication, self starter, thinking on feet, hardworking, reliable, trustworthy, positions of responsbility etc. Explain any gaps if any. Further you go back, less detail required.
4. Hobbies / Interests - again try and sound active, interesting, but no BS.
5. Referees if available or availalbe upon request etc.
Use word spell check / grammar check before sending. Send as a pdf or paper copy.
